Egg-cuse me, but can I just say that I'm egg-static about this egg-citing breakfast dish. It's a table for one meal but you can double it and make as many as you wish.
Preheat oven to 400° and coat 16oz baking dish with nonstick
spray. Pan fry 1¼ cup of frozen hash
browns according to packaging directions and spread evenly into baking dish. Cook and crumble 2 slices of bacon, set aside. Evenly top the hash browns with ¾ cup of sliced
spinach, layer the bacon and ½ cup cheddar cheese. In a medium bowl, whisk together 2 eggs, ¼ cup
of half and half, salt and pepper. Pour this over the casserole mix and pat
down the mixture with a flat spatula. Top
with the sliced tomato and sprinkle with cheese and oregano. Bake 25 minutes or until eggs are set.
