Zucchini Egg Scramble



It ain't life if I'm not rushing and this morning was no different.  I rushed through this dish, forgetting my cheese and oregano so it may not look pretty but don't let that fool you, it was good.  Here's what I did, minus the cheese and oregano of course, LOL!

2 eggs
onion, chopped, I used white
1/8  teaspoon minced  garlic
½  small zucchini, cut into thin coins
Oregano to garnish
Your favorite cheese, shredded or grated
salt and pepper
olive oil

1.  Beat eggs in a small bowl add salt and pepper and set aside.  Heat an oven & stove safe skillet or pan over medium heat until warm.  Add a couple swirls of olive oil.  Add onion and garlic.  Stir for a minute to infuse the oil.

2.  Add zucchini and cook, stirring often, until lightly browned and cooked through.  About 5-7 minutes for thin slices.  Spread zucchini mixture evenly on the bottom of the pan.

3.  Turn your oven to broiler.  Pour the eggs evenly over the zucchini and cook on the stove until the bottom is lightly browned.  This will only take a few minutes.  The top may still look wet, the broiler will take care of that. Sprinkle with oregano and transfer to the oven to finish the top.   This should not take long so watch it carefully. Don’t let it burn!

4.  When done slide to a plate, sprinkle with a few pinches of grated cheese, salt and pepper if needed and enjoy!
