Baked Egg in Avocado

Okay, so I'm sure mine is overcooked.  I do not like runny eggs...sooo not there yet, yucky! However, my overcooked version was good to me.  A little dry, but good.  Next time I will make some type of sauce to drizzle over my Avo-Egg and it will be even better. Here's what I used: 

1 avocado
2 smalls eggs
1 slice of bacon cooked and crumbled (optional)
Salt and pepper to taste
Additional toppings of your choice


Preheat oven to 425 degrees. Cut avocado in half and scoop out some of the middle to make room for eggs.  Place the avocado halves into a small baking dish making sure they do not tilt over.  You can use foil to build craters for the avocado to rest in. Crack 1 egg into a bowl, using a spoon take the yolk and spoon it over into the avocado half, continue spooning the egg whites into the hole until its full.  Sprinkle salt and pepper on top of eggs to taste.  Bake for 15 minutes or until egg is cooked to your desired consistency.  Sprinkle crumbled bacon on top.  Add additional toppings, like salsa, chopped tomato, cheese or even spread it on toast!
