Well, I tried. Not sure if my math was off, as I attempted to cut the recipe in half, but my batter was extremely too wet to form balls to make cute little scones. As disappointing as it was that these weren't looking like I had hoped, I decided to just roll with it and call them Scookies! They're chewy, spongy, a little sweet and even better, a healthy treat. I followed the recipe at: sophspiration's Tumblr page making a few substitutions to use what I had on hand.
To Make:
2 cups flour, 1/4 cup Truvia for baking (used real sugar), 1 tsp salt, 1/2 tsp baking soda, 3/4 cup of fat free plain Greek yogurt, 1 whole egg, 1/2 cup silk light soy milk (used Almond milk), 2 tsp butter, 1 diced apple (used rose pacific), 1/2 Tbsp cinnamon.
Heat oven to 350. Mix flour, sugar, baking soda & salt. In a separate bowl mix yogurt, egg & milk. Mix wet ingredients butter & dry ingredients together then gently add apples & cinnamon. Shape into 14 roundish scones. Bakes 15 minutes until just starting to brown. Let cool & enjoy!
