Applesauce Oatmeal Pancakes

One healthy short stack coooooming right up!  Let me just say that me nor my taste buds were prepared for the flavor explosion that came along with these pancakes and my little fruit syrup concoction.  They were so filling, good and guilt free. Want fireworks in your mouth too? Here's how to make them:





Ingredients:
  • 1/2 cup quick oats (I used blueberries & cream)
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 cup sugar 
  • 1 cup Silk Unsweetened Vanilla almond milk (used original)
  • 1/2 cup unsweetened applesauce (used original)
  • 1/2 Tbsp melted butter
  • 2 egg whites (I forgot these)
    Directions:
    In a large bowl, sift together the flour, oats, baking powder, baking soda, salt, cinnamon and sugar.  In a separate bowl, whisk together almond milk, applesauce, egg whites and butter. Slowly fold the liquid ingredients into the large bowl of dry ingredients. Preheat a lightly oiled griddle or frying pan over medium-high heat.  Scoop and pour batter in 1/4 cup increments onto the griddle.  Cook until bubbly and lightly browned on the underside.  Flip and brown the other side.  Makes 5 pancakes.  Adjust accordingly.

    To make the topping: microwave the fruit of your choice until warm, add maple syrup, stir and drizzle over pancakes!  Yummy.
