Egg, Cheese & Bacon Breakfast Pizza

Pizza for breakfast again?  Yep, but this time on a whole wheat tortilla. Simple and delicious.  This is a table for one recipe, but double or triple the ingredients to make however many you'd like!

Ingredients:
Olive Oil
1 whole wheat tortilla
2 eggs, scrambled
1/4 cup of frozen season blend
2 slices of bacon, cooked and crumbled
1/2 to 1 cup of shredded cheese

Directions:
Preheat oven to 450 degrees.  Heat olive oil over medium heat, add season blend veggies, cook until soft, then add eggs.  Scramble eggs until thoroughly cooked but still moist.  Spoon over egg and veggie mixture onto tortilla and sprinkle bacon and cheese on top.  Bake for a 5 to 7 minutes until cheese is melted and starting to brown.
