Greek Yogurt Creamed Spinach & Pan Seared Salmon

One word, YUMMILICOUS!  Make this, eat it and thank me later!

For Spinach:
2 tablespoons olive oil
1/2 yellow onion
12 ounces of fresh spinach
1/2 teaspoon flour
1 cup Greek yogurt
1/4 teaspoon minced garlic

Heat olive oil in heavy pan.  Add onion, cook until translucent then add garlic.  Begin to add spinach in bunches, as it wilts add more.  While spinach is cooking mix flour and yogurt.  When spinach is wilted, stir yogurt mix into spinach.  Cook 1 minute and season to taste. 

For Salmon:
Heat 2 tablespoons of olive oil in a heavy pan.  Season 4 salmon filets, both sides.  I used garlic powder, onion powder and lemon pepper.  Cook for about 3 minutes, turn over, cook for 5 minutes or until brown and flakes easily.
