Guacamole Deviled Eggs

What's good for breakfast, a snack or an appetizer, is loaded with a good dose of healthy fats and is the most beautiful color in the world?  These yummy Guacamole Deviled Eggs.  They're easy to make and are perfect for any dietary restriction – vegetarian, gluten-free, weight watchers, low-carb and paleo.  Here's what you need.

 

 

 

  • 6 large eggs, hard boiled 
  • 1 medium haas avocado
  • 2-3 tsp fresh lime juice
  • 1 tsp red onion, minced
  • 1 tbsp minced jalapeno
  • 1 tbsp fresh cilantro, chopped
  • kosher salt and fresh ground pepper, to taste
  • 1 tbsp diced tomato
  • pinch chile powder (for garnish)
Peel the cooled hard boiled eggs.  Cut the eggs in half horizontally and set yolks aside.  In a bowl, mash the avocado and 2 whole egg yolks discarding the rest.  Mix in lime juice, cilantro, salt and pepper to taste and mix well.  From here you can either scoop in spoonfuls of the guacamole into your egg halves or dump the mixture into a sandwich bag, cutting one corner at an angle and squeeze the mixture out of the bag into your eggs.  Sprinkle with a chilli powder for garnish and serve.
