Eggs Baked in Tomato Sauce
My new motto: throw an egg on it and call it breakfast LOL and today was no different. Here we have eggs baked in tomato sauce and yes it was delish.
Slap a teaspoon of olive oil in the pan, chop up a few onions, cook them for a few minutes then add a little minced garlic. Toss in about a half cup of diced tomatoes, juice and all and cook until most of the liquid has cooked out. Add a half cup of tomato sauce (I used garlic basil and oregano flavor). Place the mixture in a oven safe dish and crack 2 eggs on top and sprinkle with salt n pepper. Add cheese of you like, I didn't was still tasty. Bake on 425 for about 12 minutes or until eggs are cooked to your liking.
