Cauliflower Hash with Bacon & Fried Egg

This was good. I guess I like cauliflower, I didn't even know. LOL. Or maybe it was the bacon that made this good? Either way, I would definitely make it again. Here's what I did:


In a medium skillet, cook a slice of bacon (cut into pieces) and diced onion until they just start to brown. Add the cauliflower; cook and stir until the cauliflower is tender and nicely browned all over. I added a couple teaspoons of butter during cooking to keep it from sticking and minced garlic to add a little more flavor. Season to taste with salt and pepper.  Cook a fried egg to your liking and slap it on top and enjoy!
