Ok, so my smoothie was a little more almond-y than coconut-y but I used what I had on hand. I'm glad that I did, this was surprisingly good. I subbed the coconut milk for almond milk. I really didn't think I would enjoy the taste of almond butter in a my drink but I was deliciously wrong!
Add all following ingredients to a blender and blend until smooth. 1 1/2 cups lite coconut milk, 1/2 frozen banana, 2 tablespoons almond butter, 1/2 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, 1 tablespoon honey, 2 tablespoons unsweetened flaked coconut , 1 cup ice.
