Cheat weekend was great to my mouth but not to my body. Saturday, I completely embarrassed my daughter with the moans and groans I made while enjoying a snow cone. It was SO good! But sadly this morning, I stepped on the
scale and whaddya know...I've found 2 pounds that I thought I'd gotten rid of! I worked out Friday, Saturday and Sunday so I wonder how many pounds would have found their way home had I not done anything physical?? Well, back to eating better I go.
If you're in a pinch and need something quick and healthy for lunch I highly recommend Amy's Kitchen frozen meals. They are the business! No, I'm not getting paid to say that. I say it because they pass with flying colors (A's and B's) on fooducate in comparison to other frozen meals, come in vegan and vegetarian options and are quite tasty. The only drawback is the soduim intake, so be mindful of that.
Today I had a little bit of India in my microwave for lunch. I bought the Indian Vegetable Korma. This will only make the 2nd time Ive had Indian food so it was good to me being that my palate doesn't know the difference between good and bad Indian cuisine.
The meal consisted of: tender
organic vegetables in a curry sauce with a rich, mild flavor that comes from
coconut milk and organic raisins, cashews and slivered almonds, combined with
organic tomatoes and authentic hand-roasted Indian spices. On the side are
fragrant golden basmati rice and a dal consisting of a mixture of six
delicately spiced lentils and beans.
The picture really doesn't do it justice, it was something different and pleasant in flavor. If you try it, let me know what you think.
