LA Food Prize Session 2 | Dinner 4 with Jessica Comegys

When I walked into Kitchen and Bath Cottage for Chef Jessica Comegys' dinner, she and her staff were prepping.  This was no unusual site or different from any of the previous dinners I've attended, but when I caught a glimpse of the appetizers that were being prepped, I was highly impressed!  Those impressions lasted for the remainder of the the night as each artful course came to the table, beautifully plated with beautiful flavors to match. 

Chef Jessica called last night's dinner a Chakra Balancing Dinner.  Each course was matched with one of the 7 chakra energy centers.  It was her wish that we found balance in our chakras as we nourished our bodies with clean, pure (and pretty, my words not hers) foods.  Here's what we ate!

ROOT

Beet Cured Verlasso Smoked Salmon 
Sustainably sourced salmon cured with detoxifying beets and smoked over Bourbon cask barrel, served inside a crispy cornet and topped with a magnesium rich radish slaw.
This course was full of surprises.  When I first saw these, I thought they were super cute, but I also thought they were sweet.  After looking over the menu, I was pleasantly surprised to read that they were savory, YUM!  I'm such a savory girl!  I also found out that Chef Jessica uses the hashtag #eatpretty -  no surprise there, all of the food was beautiful.




SACRAL
Summer Citrus Salad
Vitamin antioxidant rich orange and pineapple tossed with field greens inside a fresh edible tulip.
Tulips are one of my favorite flowers.  I now love them even more.  I had no idea that they were edible nor that they had anti-aging and cancer fighting properties. The salad was amazing, the tulip was fresh and kind of sweet and paired with the fruit, it was just perfect!




SOLAR PLEXUS
Sweet Corn Velouté
Fresh roasted corn puréed with white wine, herbs and organic and grass fed cream, topped with truffle zest and acorn crisp.
Another pretty plate bowl came to the table and I again thought to myself, its just so pretty.  I ended up dumping the corn kernels and the crisp into my soup and yes, I ate the floral pieces too!



Custom made cocktail. I asked for something fruity and the Midnight Rider was whipped up by Fatty's Pub and Grille and served with a smile!


HEART
Herb Roasted Halibut
Wild caught halibut topped with herbs and pistachios, whipped celery root, baby Romanesco, stinging nettle and pea purée.
 
I'm guessing Chef Jessica's staff saw how impressed and intrigued I was with plating because I got a tap on the shoulder and heard a voice say "we're plating one more, come see this."  I did and I videoed it as well, duh!  See it here.  The pea puree provided the perfect soppage opportunity and was utilized accordingly!

THROAT
Chamomile Spirulina Sorbet
Soothing chamomile is paired with nutrient dense Spirulina to round out the pallet cleansing sorbet.

Palates cleansed and pleased with this delicious dollop of sorbet.  Even this course was garnished with an edible flower.  Her attention to detail was SO on point!


THIRD EYE
Cacao Cake and Berries
Antioxidant and vitamin rich cacao and dark chocolate cake, berry macaroon, marscapone ice cream, berry-fig brandy sauce.

So, I accidentally dug in before photographing the desert course but remembered before it was all gone.

CROWN
White Peony Smoked Lavender Martini
Relaxing lavender steeped with free radical fighting white peony for the perfect ending cocktail.


We finished the night with a toast.  Viva Chef Jessica!
