So I felt adventurous and wanted to make a Vegan Queso. I specifically wanted a recipe that didn’t call for cashews, because they are not my fave. Believe it or not, I used eggplant to make this! Although it didn’t taste exactly like dairy queso, it was good. Maybe a little heavy on the cumin but good. My daughter on the other hand, took one bite of it and turned up her nose. So maybe today was actually fondue for one. Haha! See y’all tomorrow.
