Seated at our beautifully decorated tables, Chef Panerina Soumas (Pansou) greeted
us all with a "Bonjour, comment ça va?" After a brief moment of
silence, I mustered up enough courage to reply, "ça va bien" as she
flashed me a smile. I thought to myself, come on through, elementary,
middle and high school French class, but I digress. Do you see this beautiful arrangement?
Chef Pansou gave a
brief history about her Creole heritage and went on to introduce her
first course. I immediately fell in love with the creative names of her dishes! Here's what we ate.

Loved this creative name of this dish. There was a little kick of heat and the flavors hit all the right notes. I didnt indulge in the cabbage leaf, but a table mate of mine did! |

This was AMAZING! Sweet and spicy! Chef Pansou says this dish originates from a Hatian background and is traditionally served with toast instead of chips. This salsa can be purchased on her website. |

Ground pork, black beans, red beans and diced tomatoes, all stuffed into a "peppa" - how could this be wrong? Exactly, it was not! Yum! |
